Brown Butter Pumpkin Rice Krispie Treats

Okay let's get serious. I could put brown butter on anything. Over ice cream, on a nice steak, swirled into a loaded baked potato, or in icing. I mean really, just put it on a spoon and I'm good. Well, let's not get too carried away. Brown butter has this nutty appeal unlike anything my taste buds have experienced. You want to add richness to something? Add it right in there. I do just that to my typical rice krispie treats. I was in line at Starbucks picking up a Pumpkin Spice Latte for my hubby this morning, and wanted to skip the whole ordeal to run home and make some Pumpkin Rice Krispie Treats. I was browsing Pinterest last week and came across this. Now today I didn't have the time to shape and mold, but there will be some crafting on this next adventure. Who wants to spend the time forming these bad boys and prolong the incredible flavor that fills your palate? Let's get moving then!



Pumpkin Rice Krispie Treats

4 ounces (1/4 pound or 1 stick) unsalted butter, plus extra for the pan
1 10-ounce bag marshmallows
Heaping 1/4 teaspoon coarse sea salt
1/4 cup canned pumpkin puree (or fresh) BLOT moisture out
1/4 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp cloves
6 cups Rice Krispies cereal (about half a 12-ounce box)



Butter (or coat with non-stick spray) an 8-inch square cake pan with 2-inch sides.

In a large pot, melt butter over medium-low heat. It will melt, then foam, then turn clear golden and finally start to turn brown and smell nutty. Stir frequently, scraping up any bits from the bottom as you do. Don’t take your eyes off the pot because the period between the time the butter begins to take on color and the point where it burns is often less than a minute. Don't let it burn!

As soon as the butter takes on a nutty color, turn the heat off and stir in the pumpkin, and once mixed, add marshmallows. The residual heat from the melted butter should be enough to melt them, but if it is not, turn it back on low until the marshmallows are smooth.

Remove the pot from the stove and stir in cereal. Quickly spread into prepared pan. 

Let cool, cut into squares and get ready to skip all meals in place of these.
