Pumpkin Blondies




Sigh....What is it about fall that invigorates my senses so much I even smell pumpkin in my sleep? The rustic candles are burning while my oven bakes up something warm and tasty today. State fairs are about to start, we will attend hayrides, see all the gorgeous leaves changing, go apple picking, watch the face painting with the kids, bring out those fun scarves, and yes OH yes, pumpkin everything. I have made it a goal every year to try at least one new pumpkin recipe. Then of course I will also make all the old favorites. This year I'm starting things off with the new recipe. A nice fall twist to an old favorite. I was shopping for school supplies (can you believe Zachary is going to pre-school? I would like to rewind now please..) and just happened to glance over on the end cap and saw these beauties...


                                    

Nestle, you've done it again. I couldn't help but imagine all the creations we could make. Brownies chocked full of these, using them as topping for butter pecan ice cream, and wait..what about a blondie!? YES! I snatched them up as quickly as I saw them, threw them in the basket and got right to work once the kids went to bed. My husband loves pumpkin anything, especially that Pumpkin Spice Latte from Starbucks. He pays no mind to those "what's really in there" posters people post up. I mean really..we eat Scrapple. YOLO right? I just knew he would fall for these..pun intended.


Pumpkin Blondies



1 cup butter, melted and browner
3/4 cup granulated sugar
3/4 cup light brown sugar
2 tsp vanilla
3/4 cup pumpkin puree
3 1/2 tsp pumpkin pie spice
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 cups flour
1 10oz bag of Pumpkin spice morsels

Make it and Bake it!

  1. Preheat oven to 350.
  2. Line a 9x9 pan with aluminum foil and spray (let the sides fold over for easy lifting after baked) with cooking spray, set aside.
  3. In a small saucepan over medium heat melt butter. Once melted, swirl constantly until it turns a golden brown color. Remove from heat.
  4. In a large mixing bowl stir both sugars and browned butter together until combined.
  5. Stir in pumpkin and vanilla.
  6. Add the pumpkin pie spice, baking soda, baking powder, salt and flour. Stir until evenly mixed.
  7. Fold in the morsels.
  8. Bake for 25-30 minutes. Center will just be set.





This needs nothing but a mouth to put it in.
