What is your perfect cookie?
Maybe it has bits of chocolate in it, or maybe it's one of those thumbprint ones? Maybe there is fruit inside, or maybe it's dipped.
Or maybe, you're like me, and you like them all. All cookies are the best kind to me.
In the fall, I like to try to drum up new recipe ideas. Yesterday I had a day off from my baking business, so tackling a new idea I'd been thinking about for the past week, was high on the agenda. And boy, did it go over well with the entire family.
These buttery cookies, have cinnamon and toffee. You could have stopped at buttery and had me swooning for two or three helpings, and a tall glass of cool milk.
The flavor combo was radical. Our oldest snagged one, and was back within minutes, still chewing on the first cookie as he swiped another two!
Right there in the moment, I started in on another batch! I love this recipe because it's easy to double (or even triple if you're cookie serious) because there isn't an odd amount of eggs.
Make yours today! Add in some pecans if you'd like. I was planning on that, but our oldest daughter is not a fan of nuts. But they would work really well here too!
Ingredients:
1 cup butter, softened
3/4 cup brown sugar
3/4 cup white sugar
2 eggs
2 tsp vanila
2 + 3/4 cups flour
1/4 tsp nutmeg
2/ tsp cream of tartar
1 tsp baking soda
1/4 tsp salt
8oz pkg toffee bits
Coating:
1 tbsp cinnamon
2 tbsp white sugar
2 tbsp brown sugar
Method:
1. Preheat your oven to 375.
2. Cream butter and sugars. Add vanilla, and then eggs, one at a time, mixing in between additions.
3. Add remaining ingredients, mixing well. It will be thick and sticky.
4. Mix together the sugar coating in a bowl.
5. Scoop out a tablespoonful, roll the mixture into a ball, and roll into coating. Place on a silpat (THIS is what I use - and LOVE!) or greased cookie sheet.
6. Bake 8-9 minutes. Let the cookies rest for about 5 minutes before transferring to a drying rack.
Makes about 2 dozen.
Now go make these beauties, and serve them with the milk, as pictured, or a nice cup of coffee/tea. Beverage not required ;)
