Apple Spice Pecan Cake

I have an addiction to baking. 

I have no intention to quit. 

My husband loves when I say that. 



Pound cake is so versatile. You can throw anything in it, or on top of it. Once it's baked, more magic can happen. Think of summertime with fresh berries and cream. Think of winter with some melted peppermint infused chocolate, or in the fall with some warm pecan bourbon drizzle. I need to stop. This is getting out of control here.

I had apples. I had pecans. What else would you do?



Throw 'em together and immerse yourself with the scent that will hail from the oven. I refused to open the windows today even though it typically happens on a breezy day like this. Sorry neighbors. This was just too good.


Here we are. Let's do this.

Whatcha need:

3 sticks butter, slightly softened.
1 + 1/2 cups sugar
1 + 1/2 cups brown sugar (light or dark, whatever you have)
5 whole eggs plus 1 yolk
1 + 1/4 tsp butter extract
1 tsp lemon extract
2 tsp vanilla
1+ 1/2 tsp nutmeg
2 tsp cinnamon
1 tsp ginger
1/4 tsp cloves
1 Granny Smith apple, chopped in bite-sized pieces
1 red apple, chopped in bite-sized pieces
1-2 cups chopped pecans (if you love nuts, throw both cups in. Otherwise 1 is enough)
9 ounces Sprite



Method to the Madness: 

1. Preheat your oven to 325.
2. Cream butter and sugars.
3. Add in spices.
4. Add eggs, and yolk, one at a time, and mix in between.
5. Add extracts.
6. Mix in flour
7. Add in sprite.
8. Beat on high for about 3 minutes.
9. Add in chopped apples and pecans, mix until all is incorporated.
10. Grease and flour a bundt pan. Don't skip this step ya'll. Your cake will stick.
11. Bake for 1 hour and 15 minutes. Check after about an hour. The toothpick should be almost clean.  few crumbs stuck to it are fine, but no goop!



Optional: After this comes out and has cooled down, top individual slices with some Brown Sugar Bourbon Drizzle. This is a separate food group in itself. Pour it in a cup and drink it with a straw. Or a funnel. I'll let you make decisions.




Bourbon Drizzle:


1 cup butter
1 + 1/3 cup brown sugar
1/2 cup heavy whipping cream
2 heavy tablespoons bourbon

1. Heat butter and sugar in a pan over medium heat until it starts to bubble.
2. Add cream and bourbon. Bring to boil, and removed from heat.
3. Pour it over the cake slices. Add even more pecans if you are feigning. You're in charge here.
