Brown Sugar Spice Cookies
We needed a cookie to give away. One with a subtle something that kept you coming back for more. This cookie is it. The fall spice blend, combined with coconut and crushed pecans. Oh my. I suddenly have a drooling issue.
We made the cookies to go into our little Halloween goodie bags for teachers, family + friends.
1 cup butter, softened
1/2 cup sugar
1 + 1/2 cup brown sugar
2 eggs
2 tsp vanilla coffee creamer (yes, that's right! But not the powdered kind!)
3 cups flour
1 tsp baking soda
2 tsp cinnamon
1 tsp nutmeg
1/8 tsp cloves
1 cup finely crushed pecans
1/2-1 cup coconut flakes
1/2 tsp salt
1 tbsp whipping cream
1. Preheat to 350. I think that's how most recipes start don't they?
2. Cream butter and sugars together until smooth. Add eggs, beating after each one. Add vanilla, spices, pecans and coconut. Add in whipping cream and flour last.
3. Drop by spoonfuls on lined baking pan.
4. Bake for 10-12 minutes until the edges are a beautiful golden brown. Let cool on the pan for a few minutes before moving them to a rack to fully cool.
Eat. Moan. Dunk in milk/tea/coffee. Repeat. Do not share hehe!

I think the "broom" bags were successful, and more importantly were fun!
We also made some pumpkin brown butter Rice Krispie Treats!
We dipped a third of them and sprinkled a little fun on top.

Now. Onto the cookies. These are one of my Chocolate Chip cookie recipes as well. Omit the spices, (minus the salt), coconut and pecans, and sub 1-2 cups of chocolate chips depending on how many you like in there.
