Southwestern Lettuce Wraps

Maybe it's the scenery that adds to the incredible flavor, spice, and heat their food brings to your tastebuds. But I was totally amped up to bring all that back to us sans the chopper. (Honey if you're reading this, I still want that helicopter. Christmas is just around the corner, and I've been nothing short of sweet all year. **batting eyes**)
PF Changs is infamous around here for their lettuce wraps, and honestly I would give anything to get my paws on their recipe. This was the only one I could find that seems to fit the bill for now without having to actually pay the bill. Score!
Tonight, we're twisting Chang's recipe and heading into the south-west. We will have to close our eyes for the whole scene. Right now if you look around I see my precious 4 year old's artwork gracing the house. The kid has talent, and I'm proud ya'll.

Ingredients:
2 chicken breasts
1 can Rotel
1 can Rotel
2 zuccinni
2 cups chopped mushrooms
1 can black beans, rinsed
1-2 cups frozen corn (i love corn so i stick with 2 cups)
1 onion, minced

2 cloves garlic, minced
1 pepper, diced
1 tbsp cumin
1 tsp cinnamon
1/4 tsp smoked paprika
1 tsp brown sugar
1/2 cup chicken stock
1 bouillon cube
1 head of lettuce
sour cream, optional
salsa, optional
avocado, optional
cilantro, garnish

Happy little veggies swimming together in the crock pot.
1. Place the chicken in the bottom of the crock pot.
2. Combine everything else in a bowl, minus the cube. Throw that bad boy in with the chicken and let 'em fight.
3. Pour it all over the chicken. Cook on low for 8-10 hours.
4. Pull the chicken out. Shred it. Throw it back in. Stir.
5. Let the mixture marinate for a little longer, or go ahead and dig in.
6. Serve in lettuce and wrap up together.

Here we are after shredding the chicken. I scooped a little out, and put it in a bowl with a dollop of sour cream. My daughter came over to investigate. Caught.
She made me share, then took over my bowl.
And finally, our South-western Chicken Lettuce wraps! These are my husbands plain jane ones. I top mine with basically everything I can find. Minus the ketchup of course.
