Pot Roast

I have so much love for beef.

And for those who truly know me, wine.

My number one meal would absolutely include both. Along with crab cakes of course.

We made this pot roast for the first time a few years ago, and wow. I had never tasted the same flavor in any other roast I've made.  I come back for more as many times as my family will allow.

I've used the recipe where you use a cup of beef broth, one packet of italian dressing mix, one packet of onion soup mix, and one packet of beef gravy. You mix them all, sprinkle if over beef in the crock pot, add, some veggies of choice, and simmer all day. It's good!

But lemme tell you. This recipe?

It surpasses any other pot roast recipe I've ever tasted.

Ingredients:

Chuck roast 4lbs ( or as big as you can get)
1 whole bottle of red wine, your choice
2 cloves of garlic, crushed
2 tbsp beef paste (found here, or in your local grocery store)
1 small can tomato paste
2 tbsp dijon mustard
1 tbsp honey
1 + 1/2 tbsp Italian seasoning, crushed
2 bay leaves (or 1 tbsp dried minced leaves)
1 onion, cut in to large pieces
2 peppers (optional), cut in large pieces
4 large carrots, cut in bite sized pieces (or 1 package of baby carrots)
4 large potatoes, cubed (you could even do sweet potatoes!)
3 stalks of celery, diced
2 packages of pre-sliced mushrooms (or buy them large and slice them yourself)
cooked egg noodles


Method:

1. Place roast in large bag. Pour in wine, garlic, beef paste, tomato paste, mustard, honey, and italian seasoning. Let marinate for 4 hours, or overnight, making sure to turn the bag over halfway through to ensure even marinating.
2. Pour everything from the bag into a crock pot. Add bay leaves, onions, potatoes, carrots, celery and mushrooms. If everything does not fit in your crock pot, use a dutch oven. The cooking time will be less for the dutch oven. So allow for that.
3. Set on low for the crock pot, for about 7 hours. For the dutch oven, place in a 325 degree oven for about 2-3 hours.
4. Serve over noodles.




I have to be honest. The marinade bag was missing two glasses of red wine.

To be fully honest I'd have to tell you who drank those glasses.

I'm not one to point fingers.
