Kentucky Hot Browns
There sits delicious: open-faced on a plate. So much love for this dish. Especially being it's a cinch to throw together. That's vital for those busy weeknights! And there's so much versatility. You can use sliced turkey, or deli turkey, chicken, or even steak. We are fans of it all. You can slice your tomatoes thick, or omit them all together. But that Mornay sauce. Oh, sweet, sweet heaven. It's full flavor ya'll, and it brings everything together. Kinda like it'll bring your whole family back for more.

Ingredients:
2 tbsp butter
2 tbsp flour
2 cups heavy cream
1/3 cup romano cheese
pinch of nutmeg
salt
white pepper
1/4 tsp paprika
1 tsp basil
1 tsp parsley
sliced turkey (about a pound)
bacon, cooked
6 slices thick bread, toasted
tomato (I usually need two)
1. Melt butter in a saucepan, and sprinkle in flour, stirring well. It will be a thick roux. Whisk in cream, and bring to a soft boil, stirring often. Remove from the heat and stir in the cheese, until completely smooth. Sometimes I have to add the pan back on the burner while on low to help assist in the melting process. Add nutmeg, salt pepper, paprika, basil and parsley. Stir well.
2. Assembly: Top each toasted slice with turkey, then mornay sauce, then tomato slice(s). You can top with more sauce if you'd like, or just sprinkle with additional cheese. Place under broiler set to high for 3 minutes or until sauce starts to bubble, and slightly turn brown. Remove from the oven, and top with bacon slices. Serve immediately.
