BBQ Chicken Pizza Soup
There's pizza, and then there's Bbq Chicken Pizza.
Then there's the soup version.
Didn't think it were possible?
Guess what....it is!
And it's almost as easy to make as it would be to order an actual pizza.
You can also add whatever you like on your pizza to this. My clan isn't a fan of mushrooms, but they would absolutely work in this, just like peppers would or even artichokes. I won't touch the latter ingredient, but for those folks that like it, go for it!
Now. Let's get souping!
Ingredients:
Olive oil
1 small onion, diced
3 cloves garlic, minced
1 tsp seasoned salt
1 tsp white pepper
1 pepper (optional), diced
1 cup diced fresh mushrooms (optional)
2 cups corn (frozen or drained canned works too. You could even used canned fiesta corn with peppers!)
2 cups shredded chicken
1 cup mini pepperoni
1 tbsp oregano
1/8 tsp cinnamon
1 tsp basil
1 cup bbq sauce (bottled or make your own)
1 + 1/2 cups chicken broth (you guys know I'm a huge fan of this stuff)
1 can (16oz) diced tomatoes (no preference here, you can use any flavor as well), drained
Shredded cheese (for topping)
Directions:
1. Heat pot over medium heat, and add onion to saute for a couple minutes. Add garlic and saute for another couple minutes.
2. Add optional peppers and mushrooms, and saute for 1-2 minutes.
3. Add in remaining ingredients (minus the cheese) one at a time, and stir until combined. Bring to almost boil, and you can serve right away, or let simmer.
4. Top with cheese.
See? Wasn't that easy? Speed dial for soup.
