BLT LINGUINI





It's not summer. Don't worry, I'm not whining. I like cold weather just as much, but you can't grow tomatoes in the cold. And I love a nice BLT sammich in the summer ya'll. So I set out to make a nice winter version of that good stuff. It was a grand slam. Make it!




1 pound bacon, cooked (reserve 2 tbsp room temp grease)
1 box linguini, cooked
grape tomatoes (roast for 10 minutes at 375)
1 tbsp balsamic vinegar
1 tbsp herbs de provence
2 tbsp mayo
2 tbsp olive oil
1/4 cup diced onion
2 cloves of garlic, crushed
1/2 tsp crushed red pepper (optional)
2 cups spinach leaves
1 cup shredded parmesan
salt and pepper to taste

1. In a large deep skillet, heat olive oil, and bacon fat. Add garlic, and onions, and sauté for 2-3 minutes. Add vinegar, mayo, herbs, and red pepper. Remove from heat and toss with cooked noodles.

2. Add spinach, tomatoes, parmesan, and bacon. Toss to coat. Add salt and pepper to taste. 



It's that simple. And it's way delicious.
