Blueberry Crumble


Seriously. Just look at that photo. You can almost taste it.
The golden, buttery crunch of the oat topping, over the juicy, sweet warm berries. It doesn't even need ice cream. And when it's like that, you don't even want to share it. I've made this recipe throughout the years over and over again, substituting different berries of the season, and still can't figure out which one I like most. Honestly? I could eat the topping on anything. Cherry pie..ice cream,  a spoon...you name it. When you mix sweet and salty, all the good things happen. And you still can add some ice cream to it, just for fun. And then, a little salted caramel on top of that. And then a cherry. Maybe some whipped cream. Okay. I'm sorry, I got slightly carried away.

All of our kids would almost happily eat two servings of their least favorite meal, just to snag a small serving of this. Okay, well maybe not happily. But you get the idea. Being its super easy recipe, they're always willing to help make it, so their helping after dinner, is a bigger portion. And I sure do love some cute helpers in the kitchen. It's all about the experiences, and memories y'all. 


Ingredients:

Crumble:
1 cup oats (i've used quick and old fashioned. Do with what you have here folks)
1 cup flour
1/4 cup sugar
3/4 cup brown sugar
1 tsp allspice
1 stick + 4 tbsp butter, melted

Filling:
4 + 1/2 cups berries (you can use frozen, but add about 5 minutes to baking time)
1/4 cup flour
1/4 cup sugar
1/2 tsp lemon juice
1 tsp vanilla 
dash salt

Directions:

1. Preheat oven to 350
2. Mix filling ingredients together gently, and pour into an 8' square/pie/casserole dish. 
3. Mix crumble topping and drop fingerfulls (is that a word?) over the berry mixture. 
4. Bake for 20-30 (5-10 minutes longer if using frozen berries) or until just golden brown along edges. 
5. Add aforementioned toppings if you truly are seeing to reach heightened levels of food heaven, and/or coma.
