Irish Beef Stew
Folks. I hit the stew jackpot. Ah, the luck of the Irish right? It's taken years for this recipe to fall into place.
It hit all the spots worth hitting, and then some.
And there's nothing like a warm comfort dish on a bitter cold day. Temps here in Virginia have been hovering in the 20's during the day, and single digits in the night. It's going to be 1 degree tomorrow night. That should just be illegal. I won't be seen outside my house. If you happen to come in our house, i'll be curled up next to the fireplace, on the couch, catching up on The Crown. Have ya'll gotten hooked into this? It's binge-worthy. I just started watching it a couple days ago, and am almost finished with season 1. Can't wait to see what's in store for next season. I also feel like it's altered how I pronounce things for the next hour after watching the show. I feel like I automatically have an English accent. Anyone else?
Speaking of accents. I do love a good Irish one too. This soup would've made my Irish grandfather quite proud. He would've polished off any extra of the stout beer I hadn't used for the soup as well.
Hop to the store, and get to making this for your favorite Irish!
Ingredients:
1 tbsp olive oil
1 chuck roast (sizes vary, we snag the largest one for more meat), cubed to 1'' pieces
4 garlic cloves
1 onion, diced (or dried onion flake equivalent)
4 large carrots, chopped
4 tbsp tomato paste
2 cups beef broth (i like this ->beef paste)
2 cups dark stout (we use Guinness)
4 tbsp parsley
2 tsp thyme
4 tbsp melted butter
4 tbsp flour
1 cup frozen peas.
Method:
1. Prep all ingredients (except last three) to add quicker.
2. Heat pot over medium-high heat .
3. Add beef, sprinkle with a little salt and pepper to taste. Turn to low heat once the meat starts to brown.
4. Add each ingredient, one at a time, stirring after addition, leaving out butter, flour, and frozen peas. Those will be added at the end.
5. Once everything is mixed, bring to a boil, then cover and set temp to low, for at least 3 hours.
6. When ready to serve, mix melted butter and flour, and spoon into stew, add peas, and carefully stir while bringing to a soft boil. Serve immediately over mashed potatoes, rice, or even inside a baked potato/bread bowl. Our kiddos like this with shredded cheese over it!
