Swedish Meatballs

Wow. Just the picture alone causes instant watering of the mouth. 



Whew. I put aside blogging things got too tough around here. I didn't stop cooking, so I have plenty of recipes to share soon. So..I'm back! And glad to be here! 


Here's my sweet little guy and I. We were cuddling on the couch yesterday before dinner. We were watching Spike. It's a Christmas movie. Watch it. It's adorable! Being in the mood for holiday activities, we decided it was paint time!

All I want for Christmas now is a laminating device to forever capture these many works of art ahead of our lives! Psst, honey if you're reading this, here's your oh-so-obvious hint hehe!


Meatballs. They're perfect for any occasion, on any time of year. We are big fans of the grape jelly and chili sauce kind. We decided to spice it up this time and do a Swedish version. 

They're simple! 

You can even use premade frozen meatballs and I won't say a word, I promise. It's that sauce that's incredible. 



Meatballs:

2 +1/4 cups heavy cream
2 tbsp butter
salt and pepper to taste
2 slices of white bread, in small pieces
12 oz ground pork
12 oz ground beef
1/2 tsp allspice
1 tbsp parsley
1 egg
1/2 onion
3 tbsp flour
3 cups beef stock
1 tsp beef base

Meatball Method:

1. In a small bowl let pieces of bread soak in the cream for about 10 minutes. 
2. Add in meats, allspice, parsley, egg, onion, salt and pepper, and mix until just combined. 
3. Shape into balls and place onto lined baking sheet.
3. Heat butter in skillet. Working in small batches so the meatballs are not crowded, saute until browned all over.
4. Preheat oven to 350. Bake meatballs for about 10 minutes or until no longer pink inside. 



Gravy Ingredients:

1 can cream of mushroom soup
2 cups water
2 tbsp beef base
2 cups sliced mushrooms
1 onion, diced (my husband detests onion chunks. You can use 1 +1/2 tsp onion powder instead)
1 tbsp garlic, minced
1 tbsp A1 sauce
1 tbsp Worcestershire sauce
1 tsp allspice
1/2 tsp salt
1 tsp pepper
1 cup plain greek yogurt 
meatballs (frozen or use my recipe above)



Gravy Method:

1. Combine everything minus the yogurt. Pour over meatballs in crock pot for about 4 hours on high, 6 hours on low. 
2. 30 minutes before serving, add the yogurt, stirring well. Switch crock pot to low if it's not there already.
3. Serve over egg noodles or rice!
